  • 1 tsp Dijon mustard
  • 1/8 tsp kosher salt
  • For Serving:
  • 4 whole wheat rolls
  • 12 dill pickle chips

Directions

  • Brine the chicken. Pound the thicker end of each chicken breast to an even thickness of about 1/2 inch. Place in a shallow bowl and pour enough pickle juice to fully cover. Cover and refrigerate for at least 4 hours or up to 8 hours.
  • Make the spicy mayo. Combine the mayo and sriracha in a small bowl and stir until smooth. Refrigerate until ready to use.
    Make the slaw. In a medium bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, and salt. Add the sliced cabbage and shredded carrots and toss to coat evenly. Cover and refrigerate until ready to assemble.
