The technique is simple: a loose beef ball hits a screaming-hot cast-iron pan, gets pressed flat in one firm motion, and comes out with deeply browned, crispy edges and a juicy center. From start to plate in about 15 minutes.

Ingredients

Smash Burgers

  • 1 lb ground beef (80/20 recommended)
    1 1/2 tsp
  • Worcestershire sauce
    1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Fine sea salt and freshly ground black pepper
  • 4 slices American cheese (or any melt-friendly cheese)
  • 4 burger buns, buttered and toasted


Toppings: crisp lettuce, pickles, thinly sliced onions, tomato slices


Burger Sauce

  • 1/2 cup mayo
  • 1 Tbsp Dijon mustard
  • 1 Tbsp ketchup
  • 1 Tbsp pickle juice
  • 1/2 tsp smoked paprika

Directions

  • In a bowl, combine the ground beef, Worcestershire sauce, garlic powder, and smoked paprika. Mix gently until just combined. Do not overmix. Divide into 4 equal portions (about 4 oz each) and roll into loose balls. Refrigerate until ready to cook.
  • Whisk together all burger sauce ingredients in a small bowl. Set aside.
  • Butter the cut sides of each bun and toast in a skillet or on the griddle until golden. Set aside.
  • Heat a cast-iron skillet or flat-top griddle over medium-high heat until very hot. You want the surface to sizzle instantly when the beef hits it.
  • Season the top of each beef ball with salt and pepper. Place 1 to 2 balls in the hot pan, seasoned side down, leaving enough room between them for smashing.
  • Immediately lay a small piece of parchment paper on top and press firmly with a burger press or flat metal spatula until about 1/4 inch thick. Remove the parchment.
  • Cook undisturbed for 1 1/2 to 2 minutes until the edges are deeply browned and crispy.
  • Flip each patty using a sturdy spatula, scraping the bottom of the pan to keep the crust intact. Immediately place a slice of cheese on top. Cook for another 45 to 60 seconds until the cheese is melted and the burger is cooked through.
  • Assemble on toasted buns with burger sauce and your preferred toppings. Serve immediately.

  • Keep the beef loose when forming the balls. Packing them tightly makes the burgers dense and chewy rather than tender in the center. Handle the meat as little as possible.
  • Smash once and only once. Pressing the patty a second time pushes the juices out and defeats the whole point. One firm press at the start is all you need.
  • Get the pan genuinely hot before adding the beef. A surface that isn’t hot enough will steam the patty rather than sear it, and you will lose the crispy, caramelized crust that makes smash burgers worth making.
  • Use a sturdy metal spatula and scrape firmly when flipping. The crust sticks slightly to the pan, which is what you want. Scraping it cleanly keeps the crust attached to the patty rather than left behind in the pan.
  • If the cheese is not melting fast enough, place a lid over the skillet for a few seconds. The trapped steam finishes the melt quickly, preventing the patty from overcooking.
