This high-protein ice cream is one of those recipes that genuinely delivers on its promise. The base is frozen banana blended until smooth and creamy, which gives you that thick, scoopable texture without any dairy, added sugar, or fancy equipment. A scoop of protein powder brings the protein up to 16 grams per serving in the chocolate version, and the whole thing takes about 15 minutes from start to finish.

  • 2 Tbsp almond butter or peanut butter
  • 1 Tbsp cocoa powder
  • 1 scoop chocolate protein powder
  • 1/2 Tbsp chocolate chips or cacao nibs
  • Vanilla Version:
  • 2 frozen bananas, peeled and chopped into chunks before freezing
  • 1/4 cup dairy-free milk (unsweetened almond milk works well)
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/4 tsp cinnamon

Directions

  • Chocolate:
  •  Blend the base. Add the frozen banana chunks, almond milk, almond butter, cocoa powder, and chocolate protein powder to a food processor or high-speed blender. Blend until completely smooth and creamy, about 3 to 4 minutes. Stop and scrape down the sides as needed to keep the mixture moving.
  • Add the extras. Add the chocolate chips or cacao nibs, and pulse once or twice to incorporate them without fully blending.
  • Serve or freeze. Spoon into bowls and enjoy immediately as soft serve, or transfer to a parchment-lined loaf pan and freeze for at least 2 hours for a firmer, scoopable texture.
  • Vanilla:

Pro-Tips

  • Peel and slice the bananas before freezing. This is the most important prep step. Frozen whole bananas in their peel are nearly impossible to work with and take far longer to thaw enough to handle. Slicing into coins or chunks before freezing means they go straight from the freezer into the blender without any fuss.
  • Use a plant-based protein powder for the creamiest result. The recipe was developed and tested with plant-based protein powder, and it blends more smoothly with frozen banana than whey does. Whey protein can create a slightly grainy or firmer texture once the ice cream is frozen. If you have whey, it still works; just expect a slightly different texture.
  • Add milk one Tbsp at a time if the blender is struggling. Frozen banana can be tough on a standard blender motor. If the mixture is too thick to move, add an extra Tbsp of almond milk and blend again. The goal is thick and creamy, not thin and pourable, so add liquid gradually and only as needed.
  • Let it sit out before scooping from the freezer. Homemade ice cream, without stabilizers or added sugar, freezes rock-solid. Pulling it from the freezer 10 to 15 minutes before you want to eat it makes scooping much easier and brings back the creamy, soft texture. A scoop dipped in hot water also helps it glide through cleanly.
  • Store in a sealed, airtight container to prevent freezer burn. This ice cream keeps well for up to one month in the freezer, but it needs to be tightly covered. Any exposure to air leads to ice crystals on the surface and a noticeable drop in texture quality. A loaf pan covered tightly with plastic wrap or a lidded freezer container both work well.
